One of our Family Favorite Meals

My husband and I started dating right when he started pilot training. The drive to get to him was approximately 6 hours. Those drives were always full of excitement and anticipation on seeing him. One of the first meals he ever made for me was his mom’s Chicken Divine (pronounced “Divanne”).

I started making this meal more and more. When the kids came along, it became a meal where I could get them to eat their veggies. That was always a win/win for me.

I started adding my own spin to the meal. One day, I was watching Trisha’s Southern Kitchen and I saw her making Chicken Divine. She would put rice at the bottom of the dish and I thought that was a perfect idea. I would normally bake it and serve with a side of rice. Once I saw this episode from Trisha Yearwood, I decided to start adding the rice the way she did. It definitely helped the dish come together.

To make life easier, you can always get a rotisserie chicken, dice it up and mix it with the other ingredients. I love to season my chicken with my favorite seasonings, grill it, then add it to my dish. It allows a little extra favor.

What makes this meal even better, the left overs taste just as good. This recipe also is easily doubled. I loved bringing this dish to friends as an easy meal. It’s perfect for post baby dinners, surgeries’, really anything to make someone’s life a little easier. It can also be thrown in the freezer if you’re not ready to eat it yet. Just take it out, thaw it, then bake.

I hope you enjoy this as much as us. When I make it, it always makes me think about family and my in-laws. It brings them a little closer even though were miles apart.
